A Journalist Finally Makes a 30-Minute MealThere have been a long line of journalists who have tested Rachael Ray's meals and gleefully reported that they could not be made in 30 minutes. Finally, a journalist bucked the trend. Jolene Ketzenberger of the Indy Star tried several Rachael Ray recipes from Every Day with Rachael Ray, since her kids were back into the craziness of the school year.

Her overall conclusion about the recipes she tried: "Most were good -- plenty good enough for weeknight fare -- and all were indeed prepared in 30 minutes or less." Ketzenberger's family enjoyed the pasta dishes best: Whole Wheat Rigatoni with Bacon and Creamy Shells with Tomatoes and White Beans (pictured at left, from Every Day with Rachael Ray). She was surpised that they really enjoyed the Salsa Verde Turkey Burgers. She also tested Tarragon-Tomato Fish and Asian Pork Chops.

Rigatoni with Bacon
Serves 4; prepare in 20 minutes
• Rating on 1-5 scale: Taste: 4; Preparation: 4
• Comments: I liked the sauce better before I added the tomatoes; they overwhelmed the bacon/wine sauce.
• Nutrition: 486 calories; 20 g. fat; 564 mg. sodium; 68 g. carbs; 8 g. fiber

Salsa Verde Burger
Serves 4; prepare in 20 minutes
• Rating on 1-5 scale: Taste: 4; Preparation: 3
• Comments: Didn't have much hope for this, but it was good. Avocado mayo is great. Turkey is almost too moist to make patties.
• Nutrition: 653 calories; 38 g. fat; 994 mg. sodium; 45 g. carbs; 5 g. fiber

Creamy Shells
Serves 6; prepare in 30 minutes
• Rating on 1-5 scale: Taste: 4; Preparation: 5
• Comments: Tasty dish; liked combo of beans, tomatoes, cream. Jumbo shells awkward to eat; try medium.
• Nutrition: 710 calories; 31 g. fat; 418 mg. sodium; 88 g. carbs; 13 g. fiber

Tarragon-Tomato Fish
Serves 4; prepare in 25 minutes
• Rating on 1-5 scale: Taste: 4; Preparation: 5
• Comments: Very easy dish; quick cleanup. Better to use lemon juice for flavor than slices; fish absorbed bitterness.
• Nutrition: 289 calories; 15 g. fat; 99 mg. sodium; 8 g. carbs; 2 g. fiber

Asian-Style Pork Chops
Serves 4; prepare in 30 minutes
• Rating on 1-5 scale: Taste: 4; Preparation: 4
• Comments: Good, but not complex. Most flavor comes from hoisin; sauce works better on chops than on succotash.
• Nutrition: 485 calories; 27 g. fat; 572 mg. sodium; 34 g. carbs; 4 g. fiber
